This Mediterranean Cauliflower Rice recipe is inspired by light and fresh Mediterranean flavors to create a versatile and healthy side dish. To keep things quick and easy in this recipe, I've utilized store-bought cauliflower rice and frozen spinach but by all means you can make your own cauliflower rice using a food processor and a head of cauliflower if you prefer. This dish is gluten-free, grain-free, low-carb and vegetarian as is and can easily be made vegan or dairy-free by following the adjustments below.
Serve this cauliflower rice as the base for a Chicken Tzatziki Bowl or Mediterranean Hummus Bowl or pair it with any grilled or roasted meat for an easy and nutritious meal.

- frozen cauliflower rice, cooked according to package directions
- frozen chopped spinach, cooked according to package directions
- butter
- feta cheese
- fresh lemon juice

Here's how to make Mediterranean Cauliflower Rice:
Place the cooked spinach in a kitchen towel and squeeze out of the excess moisture.
Add the squeezed spinach, cooked cauliflower rice, feta cheese, lemon juice, butter, salt, pepper and dill to a small greased casserole dish.
Give everything a good stir to combine, then bake at 350 for 20 minutes. (Rather than baking you could simply microwave this until the butter is melted and the cheese is warm, about 3-5 minutes.)
After baking, give everything one final stir and serve.
Hint: This dish can be prepped ahead without baking, then covered and refrigerated for up to 3 days and baked just prior to serving.
