    This Mediterranean Cauliflower Rice recipe is inspired by light and fresh Mediterranean flavors to create a versatile and healthy side dish. To keep things quick and easy in this recipe, I've utilized store-bought cauliflower rice and frozen spinach but by all means you can make your own cauliflower rice using a food processor and a head of cauliflower if you prefer. This dish is gluten-free, grain-free, low-carb and vegetarian as is and can easily be made vegan or dairy-free by following the adjustments below.

    Serve this cauliflower rice as the base for a Chicken Tzatziki Bowl or Mediterranean Hummus Bowl or pair it with any grilled or roasted meat for an easy and nutritious meal.

    Ingredients

    Here's what you need to make Mediterranean Cauliflower Rice:

    A bag of frozen spinach, a bag of frozen cauliflower rice, lemon juice, feta cheese, salt, pepper, dill and butter.
    • frozen cauliflower rice, cooked according to package directions
    • frozen chopped spinach, cooked according to package directions
    • butter
    • feta cheese
    • fresh lemon juice
    • salt
    • black pepper
    • dried dill

    Instructions

    Here's how to make Mediterranean Cauliflower Rice:

    A kitchen towel with spinach squeezed in it to remove excess moisture.

    Place the cooked spinach in a kitchen towel and squeeze out of the excess moisture.

    A dish with cauliflower rice, spinach, feta cheese, butter, salt, pepper, lemon juice and dill all added but not yet stirred.

    Add the squeezed spinach, cooked cauliflower rice, feta cheese, lemon juice, butter, salt, pepper and dill to a small greased casserole dish.

    Give everything a good stir to combine, then bake at 350 for 20 minutes. (Rather than baking you could simply microwave this until the butter is melted and the cheese is warm, about 3-5 minutes.)

    After baking, give everything one final stir and serve.

    Hint: This dish can be prepped ahead without baking, then covered and refrigerated for up to 3 days and baked just prior to serving.

    Substitutions

    Want to substitute an ingredient in Mediterranean Cauliflower Rice? Here's how:

    • Frozen cauliflower rice - use an equal amount of fresh or shelf-stable cauliflower rice in place of the frozen and cook according to package directions.
    • Frozen spinach - use fresh steamed or sauteed spinach in place of the frozen spinach or use an equal amount of frozen or fresh kale.
    • Butter - use an equal amount of extra virgin olive oil or other neutral oil in place of the butter.
    • Feta cheese - use an equal amount of parmesan or mozzarella cheese in place of the feta.
    • Dried dill - use 1 Tablespoon of fresh dill in place of the dried dill or use fresh or dried oregano in place of the dill altogether.

    Variations

    Try one of these variations of Mediterranean Cauliflower Rice:

    • Spicy - add ½ teaspoon of red pepper flakes to the cauliflower rice mixture.
    • Vegan/ dairy-free - omit the feta cheese or use a vegan cheese and use a vegan butter substitute.
    • Deluxe - add quartered artichoke hearts, 2 cloves of minced garlic, pine nuts and/or sundried tomatoes to elevate this dish to the next level.

    This Mediterranean-style Cauliflower Rice is great for meal prep when packaged in individual containers with Mediterranean Chicken Tray Bake and some Yogurt Dill Sauce or Tzatziki Sauce in a separate sauce cup so it can be removed before heating everything up.
