    This delicious Healthy Lasagna Soup takes the flavors of lasagna, serving them in a healthy, 30-minute meal that you can enjoy even on the busiest of days!

    Lasagna may be one of the most widely loved comfort foods. Kids and adults alike devour it, as well as a certain cartoon cat. The classic Italian dish is a labor of love however, taking a lot of time to prepare and cook and is laden with heavy ingredients making it an indulgence. This Healthy Lasagna Soup recipe takes those same flavors but uses lighter ingredients such as turkey sausage and part-skim cheeses to make this an approachable everyday meal.

    Serve this soup with a salad like Creamy Cucumber and Onion Salad, Bocconcini Tomato Salad, or Mediterranean Chopped Salad for a complete meal.

    Ingredients

    Here's what you need to make Healthy Lasagna Soup:

    Bow tie pasta, garlic, salt, pepper, sugar, Italian seasoning, red pepper flakes, olive oil, onion, chicken broth, turkey sausage, ricotta cheese, tomato paste, mozzarella cheese, diced tomatoes, tomato sauce and parmesan cheese.

    • minced fresh garlic
    • sugar

    • black pepper
    • red pepper flakes
    • dried Italian seasoning
    • extra virgin olive oil
    • yellow or white onion
    • chicken broth
    • turkey sausage
    • part-skim ricotta cheese
    • tomato paste
    • part-skim mozzarella cheese
    • petite diced tomatoes
    • tomato sauce
    • grated parmesan cheese

    Instructions

    Here's how to make Healthy Lasagna Soup:

    A pot with olive oil, raw diced onion and raw turkey sausage.

    1. Heat the oil in a medium pot over medium heat. Add the turkey sausage and diced onion.

    2. Cook 10 minutes, breaking the sausage up with a wooden spoon while cooking.

    3. Once the sausage is cooked through, add the garlic, broth, diced tomatoes, tomato sauce, tomato paste, Italian seasoning, sugar, salt, pepper and red pepper flakes. Stir to combine and simmer 20 minutes.

    4. While the soup simmers, add the ricotta, mozzarella and parmesan to a bowl, stirring to combine. Also, cook the pasta according to package directions and drain. Ladle the soup into bowls, add some pasta, top with a dollop of cheese and serve.

    Hint: Any type of Italian turkey sausage or turkey breakfast sausage works in this recipe. You can even use chicken sausage if you can't find turkey sausage.

    Substitutions

    Want to substitute one of the ingredients for this easy Lasagna Soup? Here's how:

    • Turkey sausage - substitute an equal amount of chicken sausage, Italian sausage, pork sausage, turkey sausage, ground turkey or lean ground beef for the turkey sausage.
    • Sugar - substitute an equal amount of any alternative sweetener such as honey, coconut sugar or stevia.
    • Part-skim ricotta cheese - use an equal amount of whole milk ricotta cheese or any variety of cottage cheese in place of the ricotta.
    • Bow tie pasta - use broken lasagna noodles in place of the bow tie pasta, boiling them until al dente.
    • Tomato sauce - use an equal amount of crushed tomatoes in place of the tomato sauce.
    • Chicken broth - use an equal amount of chicken stock, bone broth, vegetable broth or bouillion mixed with water in place of the chicken broth.

    Variations

    Try one of these variations of this one-pot Lasagna Soup:

    • Spicy - increase the red pepper flakes to ½ or ¾ teaspoons.
    • Gluten-free - make this soup gluten-free by substituting an equal amount of gluten-free pasta.
    • Low-carb - to make this soup low-carb, simply eliminate the pasta.
    • Low-sodium - use low-sodium chicken broth and eliminate the salt for a low-sodium soup.

    Storage

    Once the Healthy Lasagna Soup has cooled, you can store it in an airtight container in the fridge for up to 5 days or in the freezer for up to 3 months. Store both the cheese mixture and cooked pasta in separate containers in the fridge and I do not recommend freezing these components.
