  • Heat the oil in a medium pot over medium heat. Add the turkey sausage and diced onion. Cook 10 minutes, breaking the sausage up with a wooden spoon while cooking.
  • Once the sausage is cooked through, add the garlic, broth, diced tomatoes, tomato sauce, tomato paste, Italian seasoning, sugar, salt, pepper and red pepper flakes. Stir to combine and simmer 10 minutes.
  • While the soup simmers, cook the pasta according to package directions and drain.
  • While the pasta cooks, add the ricotta, mozzarella and parmesan to a bowl, stirring to combine.
  • To serve once everything is cooked, ladle the soup into bowls, add some pasta, top with a dollop of cheese and serve.

Notes

Any type of Italian turkey sausage or turkey breakfast sausage works in this recipe. You can even use chicken sausage if you can't find turkey sausage.
