Greek Salad is a classic combination of ingredients usually containing cucumbers, tomatoes, red onion, feta cheese and kalamata olives. There are numerous twists on the traditional Greek Salad and my Chopped Greek Salad omits lettuce to showcase the texture of the chopped vegetables tossed in a simple homemade Greek salad dressing. Instructions
Here's how to make Chopped Greek Salad:
1. Chop the cucumbers, slice the red onion, halve the grape tomatoes and slice the olives.
2. In a large bowl, whisk together the olive oil, lemon juice, salt and pepper.
3. Add the chopped ingredients to the bowl with the dressing.
4. Toss everything until well-coated, then top with feta cheese.
Substitutions
Want to substitute an ingredient for Chopped Greek Salad? Here's how:
- Olive oil - substitute an equal amount of any other mild oil for the olive oil such as avocado oil.
- Lemon juice - substitute an equal amount of red wine vinegar for the lemon juice.
- Feta cheese - substitute an equal amount of another soft crumbly cheese for the feta such as goat cheese or ricotta salata.
Variations
Try one of these variations of Greek Chopped Salad:
- Banana peppers - add ¼ cup of diced banana peppers to the salad.
- Herbs - add 2 tablespoons of chopped fresh parsley or oregano to the salad or ½ teaspoon of dried oregano or dried parsley.
- Bell pepper - add 1 diced green bell pepper, red bell pepper or yellow bell pepper to the salad.
- Chickpeas - to bulk up this salad and make a meal of it add a can of drained chickpeas.
- Romaine - if you prefer your salads to have a lettuce base add 1 head of sliced romaine to the mix.

This salad is best when eaten within 3 hours of assembling it. You can however prep and chop the ingredients storing them separately in airtight containers up to 24 hours prior to assembling the salad.
